Parmigiano Reggiano (Parmesan) Vacca Rossa ("red cow") D.O.P. / B.O.B. is aged for 24 months. It is made with cow's milk from red cows, and has very high nutritional values due to the higher amounts of fatty acids in it. Its color shows a typical straw yellow hue, which is a result of grass, hay and grain-based cow feeding.
The minimum ripening age required to officially qualify as 'Parmigiano Reggiano' is 12 months.
Milk from red cows is particularly rich in fats and casein, an essential protein that optimizes milk processing and long storage.
Parmigiano Reggiano Vacca Rossa can be sliced for use in salads, or eaten as a snack or appetizer with dried fruits such as figs or plums.
It can also be enjoyed with a glass of passito white wine.
