Parmigiano Reggiano D.O.P. / B.O.B. aged for 40 months gets its strong flavor, unique aroma and grainy texture from its extra long aging time.
The minimum ripening age required to officially qualify as 'Parmigiano Reggiano' is 12 months.
The cheese can be grated or cut into small pieces to add extra flavor to most recipes, or eaten in pieces with honey or drizzled with balsamic vinegar.
Parmigiano Reggiano is naturally lactose-free and is therefore also recommended for children.
