Parmigiano Reggiano (Parmesan) D.O.P. / B.O.B. aged for 30 months, has a straw yellow color and a grainy texture. The cheese has a rich flavor of nuts, spices and hay.
The minimum ripening age required to officially qualify as 'Parmigiano Reggiano' is 12 months.
Parmesan cheese can be enjoyed with thin slices of fish or raw meat as a snack or appetizer.
The crust can be cut off and cleaned, then heated on the grill and served diced.
Parmesan is naturally lactose-free and is therefore also recommended for children.
