Parmigiano Reggiano, often called "the king of cheeses", has a long and fascinating history dating back to the Middle Ages. The Benedictine monks of the Emilia-Romagna region of Italy are believed to be the first to make this cheese. To this day, Parmigiano Reggiano is still produced using the same traditional methods, and only in a specific area of Italy that includes Parma, Reggio Emilia, Modena and parts of Bologna and Mantua.
